Recipe // Chilled Avocado Soup with Crab

I adore the person who came up with the idea of chilled soups to enjoy on hot summer days. The first time I tasted chilled soup was in Nicaragua and I think I went back two days in a row to the same restaurant to go have their soup! So yummy! Now here is a version with avocado and crab…um yummmm! If you don’t have clam juice (I hear it’s only a Canadian thing) then you can use tomato juice and spice it up a bit or add some fish sauce. If you happen to have other chilled soup recipes send them over :)

This is absolutely fantastic and perfect on a warm summer day!  With a rich and velvety smooth consistency you’ll think you’ve gone to heaven.  I have a bit of an avocado obsession and this recipe definitely satisfies my craving.  Yumm…

  1. 1 cup of guacamole
  2. 1 cup cold buttermilk
  3. 3/4 cup clam juice
  4. 1/2 cup ice water
  5. 1 tablespoon fresh lime juice
  6. Salt and pepper
  7. Jumbo lump crab meat
  8. Crème fraîche, fried tortilla strips and finely chopped chives, for garnish
  1. In a blender, puree the guacamole with the cold buttermilk, bottled clam juice, ice water and lime juice. Season the soup with salt and pepper. Pour the soup into 4 bowls and top with the jumbo lump crab meat. Garnish each bowl of soup with crème fraîche, fried tortilla strips and finely chopped chives.
  2. Serve & ENJOY!
