I adore the person who came up with the idea of chilled soups to enjoy on hot summer days. The first time I tasted chilled soup was in Nicaragua and I think I went back two days in a row to the same restaurant to go have their soup! So yummy! Now here is a version with avocado and crab…um yummmm! If you don’t have clam juice (I hear it’s only a Canadian thing) then you can use tomato juice and spice it up a bit or add some fish sauce. This is absolutely fantastic and perfect on a warm summer day! With a rich and velvety smooth consistency you’ll think you’ve gone to heaven. I have a bit of an avocado obsession and this recipe definitely satisfies my craving. Yumm…
- In a blender, puree the guacamole with the cold buttermilk, bottled clam juice, ice water and lime juice. Season the soup with salt and pepper. Pour the soup into 4 bowls and top with the jumbo lump crab meat. Garnish each bowl of soup with crème fraîche, fried tortilla strips and finely chopped chives.
